Has anyone tried or know how to triple boot Windows Server, Windows, and Linux?
I currently have Windows 7 and Ubuntu installed with GRUB as boot manager. Do I just install Windows Server, then reinstall GRUB?

It covers dual-boot system but it will cover your case as well because win7 and R2 will use the same boot manager, i.e. only of the partition will have an boot manager.
I have used the above guide to boot XP, R2 and Linux with the help of NeoGrub.
